Dextran has been described for use in the production of foodstuffs. Its value lies in its capacity to prevent crystallization, improve moisture retention, improve body and maintain flavour and appearance.
Dextran is an excellent ingredient in cosmetic preparations, such as conditioning, due to its moisture retaining properties in creams, foams and gels, for example, and in the manufacture of shaving cream.
